Choc Peanut Butter Squares

Chocolate and peanut butter are a firm favorite among children and adults alike! This 6 ingredient treat is packed full of flavour and is made with gluten and dairy free ingredients, providing a good amount of protein, fibre, essential vitamins and minerals. They are a great dessert substitution, but remember treats should be enjoyed in moderation!


Ingredients

  • 3/4 cup organic smooth peanut butter

  • 1/3 cup raw honey or maple syrup

  • 1/2 teaspoon pure vanilla extract

  • 1/4 teaspoon sea salt

  • 3 cups wholegrain puffed brown rice

  • 1 cup 70% dark chocolate

  • 1 tablespoon organic smooth peanut butter


Directions

  1. Lightly greese an 8x8" baking tray and line with baking paper.

  2. Place the peanut butter, honey, and vanilla extract into a small pot, over a medium-low heat, constantly stirring until combined and runny.

  3. Remove pot from heat mix in the vanilla extract and sea salt.

  4. In a large mixing bowl add the puffed rice.

  5. Pour the peanut butter mixture into the mixing bowl with the puffed rice and gently mix together until totally combined.

  6. Pour the mixture into the lined baking tray, using a spatula to spread smoothly and evenly around the tray. Set aside.

  7. In a separate small pan, break the chocolate into pieces and add in peanut butter. Melt over a low heat, constantly stirring until smooth.

  8. Remove from heat and pour evenly over rice crispy mix.

  9. Place in refrigerater for 1 hour to cool and set.

  10. Remove from fridge and leave for 15 minutes before cutting into slices.

  11. Store in an airtight container in the fridge.
