If you're family love LCMs bars, they will love this healthy, homemade version! Super quick and easy to make and ready in an hour, they make the perfect lunchbox addition or after school snack with none of the bad stuff and reduced sugar!
Ingredients
3 cups puffed rice or rice bubbles
2 Tablespoons cashew butter
1/2 cup low GI honey
1/2 cup coconut oil
3 teaspoons vanilla bean paste
pinch of sea salt
Directions
Line a baking tin (around 10 x 8 inches)with baking paper and set aside.
Pour puffed rice or rice bubbles into a large mixing bowl and set aside.
In a small saucepan add the cashew butter, honey, oil and vanilla. Over a low heat, mix the ingredients until they are melted and combined. Remove from heat.
Pour the mixture into the puffed rice and mix until well combined.
Pour the mixture into the baking pan and firmly press into the tin.
Freeze for 30 mins - 1 hr to set.
Remove from freezer and leave for 10 minutes before cutting into bars. Enjoy!
Store in an airtight container in the fridge as the oil will melt if left at room temperature for too long.
