Lentil, Tomato & Feta Salad





This salad is super quick and easy to make and tastes oh so fresh and delicious! With its Mediterranean flavours, it is perfect as a stand alone meal or as a side dish. Lentils are an excellent source of B vitamins, iron, magnesium, potassium and zinc, and are also a great source of plant-based protein and fibre. Tomatoes are a great source of vitamins C & K, potassium and folate, providing a major dietary source of the antioxidant lycopene, which has been linked to many health benefits, including reduced risk of heart disease and cancer. Give this salad a try and I guarantee it will become a favourite over the summer months!



Ingredients


Salad

  • 400g tin Lentils, drained & washed

  • 400g cherry tomatoes, halved

  • 150g feta cheese, diced

  • 1/4 cup contintental parsley, finely chopped


Dressing

  • 1/4 cup eschalots, finely chopped

  • 1/4 cup white wine vinegar

  • 4 tsp Dijon Mustard

  • 1/2 cup extra virgin olive oil

  • 1/2 tsp salt

  • Black pepper



Directions

  • Combine all salad ingredients into a large mixing bowl and mix together until combined.

  • Place dressing ingredients into a jar and shake well until combined.

  • Pour over the salad, toss and serve. Enjoy!
